They can be used as heat sinks to keep elements cooler while soldering such as pushing a setting into the potato while soldering other elements on. Potatoes are also great for supporting work while soldering. You can carve into it to hold pieces at specific distances and angles and even carve bits of potato off to expose more of your jewellery or to build up extra support under parts of your design.
